Carbohydrates can be defined as “anything that grows from the ground.” The sun causes green plants to synthesize carbohydrates, a process scientists know much about, yet are unable to reproduce. Carbohydrate Confusion

Traditional dietetics teaches people to prioritize “complex” carbohydrates and avoid “simple” carbohydrates. This belief was grounded on the assumption that complex carbohydrates are physically larger and therefore must break down slowly. On the other hand, it was reasoned that simple sugars enter into your bloodstream at a quick pace because they are smaller in size.

Hormonal eating advocates do not describe carbohydrates in terms of simple or complex because the simple or complex nature of a carbohydrate source does not determine the rate by which they absorb. Some complex carbohydrates absorb quickly and some simple sugars absorb slowly. The terms simple vs. complex are only good for a scientist’s compulsive need to classify things into neat categories.

It is careless for a health professional to use the word “complex” to describe a carbohydrate source because this term is misinterpreted in many different ways and fashions. Complex carbohydrates can define high glycemic foods like bagels, rice and corn but this term can also describe low glycemic foods like broccoli. Green leafy vegetables are also be categorized as a “complex” carbohydrate because they contain fiber, a material classified as a complex carbohydrate.

Why the terms “simple” and “complex” is a poor way to judge carbohydrates:
High glycemic starches with little nutritional value (white bread, corn starch, white rice, white potato, etc.) are classified as a complex carbohydrate because they are composed of long chains of glucose. The size of the glucose chain is insignificant, your digestive system including your saliva has no trouble breaking apart this long chain of sugar to yield pure glucose.
Most vegetables have a very low glycemic index although the predominant carbohydrates are made of “simple” sugars like glucose, fructose and sucrose.
Most fruits have a low glycemic index even though fruits are comprised of “simple” sugars. Fruits like oranges only become fast absorbing when you take away the fiber by sending the them to an orange juice factory.

More Carbohydrate Confusion

The glycemic index measures the time it takes the body to convert a specific carbohydrate containing food into actual blood sugar. Low glycemic, or “slow absorbing” fruits, vegetables and whole grains are beneficial because they take an extended time for the body to break down and convert into pure glucose (blood sugar). Subsequently, less insulin is required, which lengthens the time between meals, increases long term energy and causes body-fat-weight-loss.

The traditional school of dietetics openly denounces the glycemic index and proclaims the total amount of carbohydrates is more important than the rate by which they absorb. The new science of hormonal eating states these ideas are both correct! The glycemic index has been taken one step further by introducing the glycemic load. The glycemic load measures the quality (glycemic index) vs. the quantity of carbohydrates (amount in grams) of the carbohydrate source. Generally speaking you do not have to worry about the glycemic load when following the Core Fat Loss diet because portion control has already been established!

Why Carb Loading Is Bad

Old style nutritionists advise athletes “load up” on excessive amounts of carbohydrates before an event because they feel this will fill the body with long term energy. The tactic behind carbohydrate loading is to jam-pack muscle and liver cells with stored carbohydrates (glycogen), a strategy that feeds the muscles and starves the nervous system.

Hormonal eating advocates have a different perspective because as soon as insulin ushers glucose into muscle and fat cells, it can not escape back into the general circulation. Taking glucose out of the bloodstream is detrimental for the brain and central nervous system, a function which precedes physical movement and athletic ability. The average sports drink contains 56 grams of carbohydrates and is no different than having Kool-aid with added electrolytes (sodium, potassium and chloride). The types of carbohydrate (sugar) found in sport drinks have an extremely high glycemic index (95), which is almost as high as if someone was to drink pure glucose (100). Consuming high glycemic foods and drinks prior to an athletic event causes reduced sports performance as soon as a half an hour into the event. On the other hand, eating low glycemic meals prior to exercising increases stamina, promotes fat burning and causes muscle and liver cells to use up glycogen at a slower pace.

Hormonal Eating does advocate glycogen loading; however we take the moderate approach. There are other ways to fill your glycogen without the use of extremely high glycemic carbohydrates such as sports drinks, power bars and performance gels.

Instead of eating meals dominated by too many high glycemic carbohydrates, Hormonal Eating advocates suggest athletes eat larger-than-normal meals leading up to the event as a way to increase glycogen without driving insulin levels through the roof. Each meal should consist of a balanced ratio of protein, carbohydrate and fat to stabilize blood sugar and maximize performance. Your protein should be an easily digestible source such as eggs or fish.

Recommending high fiber carbohydrate sources (such as whole grains, oatmeal, fruit) would be a mistake because high fiber foods draw water out of the body and into the intestines. To fuel your body for endurance events, Hormonal Eating concepts recommend low glycemic, low fiber food with a potentially high glycemic load. Examples include pasta, Uncle Ben’s® converted rice, sourdough bread, English muffin, or Red Bliss (or New) potatoes. This way you can ride a little higher with the insulin response without going over the edge.

Endurance athletes are also advised to increase the amount of monounsaturated fat in their bloodstream prior to an event as a way to increase fat availability. This can be accomplished by snacking on nuts before the race. You can only fat-load as soon as insulin levels get too high, they will block the availability of fat. The goal of hormonal eating is to maximize endurance is to burn fat first and glycogen later. A balanced 200 calorie snack is also recommended an hour before an athletic performance to act as a blood sugar touch up. In addition, it is advised to allow at least two easy or rest days pre-event to keep muscle glycogen stores as full as possible.
